Her scientific interests lie in the multi-scale structural study of food biomass sources and the correlation with techno-functional properties, to develop strategies aimed at a more efficient use of natural resources for food applications. She has extensive knowledge in the application of X-ray and neutron scattering techniques to study the structure of food systems and packaging materials, as well as to understand the gastrointestinal digestion mechanism of foods.<\/p><\/div><\/div>\n<\/div>\n\n\n\n<div class=\"wp-block-uagb-container uagb-block-cee62c55\">\n<div data-aos= \"fade-down\" data-aos-duration=\"400\" data-aos-delay=\"0\" data-aos-easing=\"ease\" data-aos-once=\"true\" class=\"wp-block-uagb-team uagb-team__image-position-left uagb-team__align-left uagb-team__stack-tablet uagb-block-4fdd650f\"><img decoding=\"async\" class=\"uagb-team__image-crop-circle\" src=\"https:\/\/eventos.ugr.es\/foodcolloids2026\/wp-content\/uploads\/sites\/30\/2025\/04\/Ben-Boyd-300x300.jpg\" alt=\"\" height=\"150\" width=\"150\" loading=\"lazy\"\/><div class=\"uagb-team__content\"><h3 class=\"uagb-team__title\"><strong>Ben Boyd<\/strong><\/h3><span class=\"uagb-team__prefix\">Monash University (Australia) and University of Copenhagen (Denmark)<\/span><p class=\"uagb-team__desc\"><br><strong><em>A new look at milk as a drug delivery system, through the lens of lipid digestion<\/em><\/strong><br><br>Ben Boyd is a colloid and physical chemist with PhD from the University of Melbourne. He has held an academic position at Monash Institute of Pharmaceutical Sciences (MIPS) at Monash University in Australia since 2003. He recently completed a concurrent Novo Nordisk Laureate Research Fellowship based at the University of Copenhagen, and in April he commenced\u00a0an ARC Industry Laureate\u00a0Research Fellowship. She is<br>internationally renowned for her research in omega-3 lipids from different sources as well as lipid oxidation of omega-3 rich foods and she has received several awards including the Danish Danisco price 2003, the French La M\u00e9daille Chevreul 2010, the German DGF Normann Medaille 2020, the Stephen S. Chang award (2021), AOCS Fellow (2022), European Lipid Science Technology award (2023), Knights Cross of the Dannebrog Order. She holds a degree in Chemical Engineering from Chalmers and earned her PhD in Food and Nutritional Science from University College Cork, Ireland. Following her doctoral studies, Anna joined Unilever R&amp;D in the Netherlands, where she worked as a research manager and later as a project leader. Since 2012, she has pursued an academic career at Chalmers.<br>Anna Str\u00f6m has extensive experience in food structure both outside and inside the human body.
